Steamed Baked Exotic Mushrooms with Atlantic Salmon

Steaming foods is not a new thing for food lovers. The food cooks with its juices, making it tender. The result? A moist dish that’s full of flavor! Here’s one must-try exotic yet delicious dish!

Ingredients

  • 350-400g Mixed Exotic Mushrooms (Woolworths 100g Enoki stem removed, 100g Shiitake sliced, 150g Oyster sliced)
  • 1 bunch of Woolworths Fresh Baby Bok Choy – cut into 5cm pieces
  • 4 x 150-200g Atlantic Salmon Fillets – de-skinned and de-boned
  • 2cloves Garlic – minced or chopped
  • 25g piece Ginger – sliced into fine julienne approximately 2mm
  • 1 x large bunch Coriander – roughly chopped
  • 1 x bunch Shallots – roughly chopped
  • 1 x large Red Chili – roughly chopped
  • 1 x sticks lemon grass – cut into thin slices
  • 4 tablespoon of Homebrand Soy Sauce
  • 4 tablespoon of sesame oil
  • 2 tbsp Woolworths Select Fish Sauce

Instructions

  • 1. Preheat the oven to 180 degrees
  • 2. Tear 4 x 30cm pieces of aluminum foil
  • 3. Lay teared aluminum foil on the top of each other in cross formation
  • 4. Put even amount of Bok Choy to each of the foil
  • 5. Put equal amount of mushrooms in each Book Choy stack (Reserve some mushrooms for later use)
  • 6. Put a piece of salmon on each stack
  • 7. Place the remaining mushrooms on the top of the salmon
  • 8. In a small bowl, combine chili, lemon grass, ginger, garlic, coriander, shallots, soy sauce, fish sauce and sesame oil. Stir continuously to mix well
  • 9. Place equal amount of the mixture on the top of each piece of salmon
  • 10. Wrap salmon parcel by folding the foil. Place them on a baking tray and put it in the oven. Cook for about half an hour.
  • 11. When done, simply place foil on a plate and open to eat.
  • 12. This recipe is best when served with rice.
