Monday Lunch: Savory Fried Chicken With Enoki Mushrooms

Ingredients

  • Two 100g of Woolworths Fresh Mushroom Enoki Prepacked
  • 1/2 tbsp. of Woolworths Homebrand sugar
  • 1 tsp. of salt
  • 1/2 tsp. of Woolworths Homebrand soy sauce
  • 1 tbsp. of corn flour mixed with a tablespoon of water
  • 1 lbs. of skinless chicken breasts, fillet
  • 2 tsp. of oil
  • 1 onion
  • 80g of rice vermicelli, soaked
  • 1 red capsicum and 1 yellow capsicum (both sliced)

Instructions

  • 1. Mix the salt, soy sauce, sugar and cornflour to create a marinade.
  • 2. Cut the chicken breast into chunks and afterwards, marinade it with the mixture
  • 3. Heat a large frying pan and add a tablespoon of oil.
  • 4. Saute onion and add salt. Stir for 3 minutes.
  • 5. Add the capsicums and continue stirring for another 3 minutes.
  • 6. Set aside.
  • 7. In the same pan, place the vermicelli. Add onions, marinated chicken, capsicums and mushrooms.
  • 8. Pour the marinade solution into the pan.
  • 9. Add water.
  • 10. Heat the mixture for five minutes.
  • 11. Season to taste.
  • 12. Now you're ready to serve!
