Many kids shy away from mushrooms as they assume that they are not palatable. Mushrooms are loaded with nutritional contents and are essential in aiding your child’s growth. Mashed Potatoes with Mushrooms:  kids love mashed potatoes and hence this dish is ideal for introducing mushrooms in their diet. You can chop handful of mushrooms and roast them in two teaspoons of butter. Ensure that mushrooms are cooked well. Keep them aside once done.  Sauté one finely chopped onion in butter. Mash two boil potatoes finely as the onions are being sautéed. Now add mashed potatoes to onions and mix them well. Now add half cup of fresh cream to it.  Finely add the mushrooms and sprinkle oregano and thyme to this mixture. Serve it warm along with chips.

Spanish Omelette with mushrooms:  slice 1 potato and handful of mushrooms. Finely chop one large tomato and one large onion.  Sauté the onions in one teaspoon of butter on thick bottom pan. Now add sliced potatoes and mushrooms to it.  Spread the potatoes and mushrooms around the pan to form a thick base. Now sprinkle tomatoes all over the base. In a large bowl whisk three eggs and add salt, and mixed herbs along with chilli flakes in it. Spread this mixture evenly over the layer of potatoes and mushroom. Now sprinkle half cup of grated cheese over the mixture and cover the pan. Let the omelette cook over a slow flame. Serve hot.

Stuffed Mushrooms:  you will need 4-5 Shitake mushrooms for this recipe.  Remove the stems of mushrooms and clean them thoroughly. Brush them with olive oil and roast them in the oven at about 300 Fahrenheit.  For the stuffing whisk 3 eggs and add chilli flakes and thyme in them. Sauté one finely chopped onion and finely chopped tomato in a pan and add the mixture of eggs to it. Scramble the mixture and sprinkle some salt for taste. Once the mushrooms are roasted, fill them with scrambled egg mixture and top them up your favourite cheese. Serve piping hot.

Stuffed Mushrooms

Crunchy Mushrooms: Button mushrooms work best for this recipe. Clean the mushrooms and dab them dry. Beat 1 egg in a bowl and sprinkle salt to taste. You can also add mixed herbs to it if your child loves flavoured food.  In a plate spread roasted oatmeal. Dip the mushrooms in egg and roll them with roasted oats till they are covered. Deep fry till golden brown. Serve them with your favourite dip. Salsa or sour cheese dip goes well with these crunchy mushrooms.
