Ingredients

 

  • 2½ tsp. Sugar
  • 1 pkg.  dry yeast
  • 1 tbsp. warm water
  • 2 cups flour
  • 1 cups warm milk
  • Two cups of different varieties of finely chopped mushrooms [ oyster mushrooms, Portobello, shiitake and button mushrooms are the best]
  • 1 tbsp. sesame oil
  • 2 tbsp. soy sauce
  • 4 finely chopped onions

 

Method

In a bowl dissolve the sugar and yeast in the warm water and set aside for twenty minutes.  In a large bowl, sift the flour and then slowly add the mixture of yeast while stirring continuously. Now add warm milk and fold the flour. Knead the dough well. The dough should be soft yet firm. Wrap the dough in a moist cotton cloth and set it aside in a warm place for fermentation. The dough should have doubled its volume in about three to four hours.

You can now start working on the dumpling filling. In a thick bottomed pan add sesame oil and soy sauce. Now add onions and mushrooms and salt and stir it continuously till the mixture is cooked. Once the dough has risen, you should divide it into small balls. On a flat surface, dust some flour and flatten the ball. Roll it in a circular shape till it is about 4 inches in diameter. Add a spoonful of mushroom onion mixture in it. Now start wrapping the dough around the mixture to form a dumpling. Set it aside for 10 minutes. Arrange the dumplings in a steamer and steam for 15 minutes.

Ingredients

 

  • Two large Portobello mushrooms
  • Half cup flour
  • Mixed herbs
  • ½ cup grated cheese
  • Chilli flakes
  • 1 egg with yolk [whisked]
  • Oil for frying

 

In a large bowl mix the mushrooms, chilli flakes and mixed herbs.  Add ½ cup of grated cheese and mix well. In a bowl half cup flour and water to form a thick consistency batter. Add some chilli flakes and mixed herbs and salt to taste. Make small balls of the mushroom mixture and dip them in whisked egg paste.  And refrigerate the balls for an hour. Remove from the refrigeration and dip the balls in batter and dip fry. Serve with yummy dips.
