Meat Loaf with Shiitake Mushrooms

Ingredients

  • 2 (30g) Slices Whole Wheat Bread
  • 340g Premium Beef Mince (340g)
  • 340g Lean Turkey Mince (340g)
  • 100g sliced (1 cm strips) Woolworths Shiitake Mushrooms
  • 1/2 cup Finely (1 to 1.5 cm) Chopped Brown Onion
  • 1 teaspoon dried Italian Seasoning (equal quantities of basil, marjoram, oragano, rosemary, thyme)
  • 3/4 teaspoon Salt
  • ¼ teaspoon ground Black Pepper
  • 2 large Eggs lightly beaten
  • 1 garlic Clove minced
  • 4 tablespoons Ketchup
  • 3 teaspoons Dijon mustard or Whole Grain Mustard
  • 1/4 teaspoon ground Red Pepper (Paprika)

Instructions

  • 1. Place bread in a food processor, and pulse 10 times or until crumbed.
  • 2. Combine the first 10 ingredients (bread through to garlic) in a large bowl, mix well by hand (suggest using disposable gloves) and shape meat mixture into a 9 x 6-inch (23 x 15 cm) loaf tin.
  • 3. Combine Ketchup, Pustard, and Paprika in a small bowl, stirring with a fork.
  • 4. Spread ketchup mixture evenly over top of loaf.
  • 5. Place loaf in oven preheated to 180 Deg C and bake for 60 (Fan Forced) to 80 mins (No Fan)
  • 6. Serve with your favourite vegetables.
  • 7. Cook Time : 5 Hrs 10 Mins
